The search for a healthy, wholesome snack that tastes good can be frustrating.

We find ourselves frequently turning to the kitchen to make our own instead of trying yet another store bought option. 

Last year we found a favorite, go-to option in our Lemon Protein Bites.

However, there are only so many times you can eat the same thing before it’s time to switch up the flavor.

Preferably one that is bright, citrusy, and refreshing. Enter Coconut Lime Protein Bites

Almond flour, oat flour, and protein powder are the base for these healthy snack bites. For a bit of sweetness, we added some honey.

A bright, tropical flavor is achieved by adding in fresh lime zest, fresh lime juice, and flaked coconut.

We wanted a more intense, natural coconut flavor without more added sugar, so we went with unsweetened, flaked coconut.

(If the only thing you have on hand is shredded, sweetened coconut, that will work.)

The result is a surprisingly simple and super quick recipe for protein bites that are satisfying, wholesome, and not super expensive!

How to Make Coconut Lime Protein Balls

These no bake coconut lime energy bites are super easy since your blender or food processor does all of the work!

Start by adding the almond flour, oat flour, coconut flakes, protein powder, and fresh lime zest to the blender or food processor. Blend or pulse for 10-15 seconds, or until coconut is broken down.

(When I used unsweetened coconut flakes to keep the amount of added sugar down, it took a bit longer to break down than the sweetened, shredded coconut. Feel free to leave larger pieces of coconut if you want more of a chewy texture!)

Next, add in the cashew butter, honey, and 2 tablespoons of honey. Blend or pulse until combined and mixture forms a dough.

If the mixture seems a little dry, add an additional tablespoon of fresh lime juice.

Finally, roll the dough into approximate 1-inch balls. This gives you a nice size for a quick couple of bites.

If you want a more substantial protein bite, feel free to shape to whatever size seems best for you.

Store the bites in an airtight container. For optimal freshness and to keep them lasting the longest, store the protein bites in the refrigerator.

Tips for Making Coconut Lime Protein Bites

  • Due to the difference in cashew butters, and even protein powders, you may find that your mixture still seems too “wet” or too “dry” after mixing all of the ingredients together.
    • If the mixture doesn’t hold together when pressed, add in more lime juice or honey a tablespoon at a time. If the mixture seems too wet, add more oat flour, a tablespoon at a time, until you reach desired consistency.
  • Because natural cashew butter can be quite oily, make sure to thoroughly incorporate the oil before measuring.
  • The nutrition information will vary based on the type of protein powder used, since protein, sugar, and fat content can vary greatly between brands. 
  • Feel free to make these protein bites any size you want. The size recommended is just enough for a quick boost!

Optional Add-ins

  • Looking for some sweetness? Try adding 1/2 cup white chocolate chips.
  • Looking for some crunch? Try adding 1/2 cup chopped cashews or almonds.
  • Looking for some chewiness? Swap out the oat flour for quick cooking oats.

Ingredients

  • 1 Cup almond meal/four
  • 1/2 Cup oat flour
  • 1/2 Cup coconut flakes/shredded coconut (sweetened or unsweetened depending on preference)
  • 4 Tablespoons vanilla protein powder (try to use one with little to no added sugar)
  • 1 Tablespoon fresh lime zest
  • 1/4 Cup natural cashew butter (make sure that any oil is thoroughly stirred in before measuring)
  • 3 Tablespoons honey
  • 2-3 Tablespoons fresh lime juice

Instructions

  1. In a high-powered blender or food processor, combine almond meal, oat flour, coconut flakes, vanilla protein powder, and fresh lime zest. Blend/pulse for 10-15 seconds to break down the coconut.
  2. Add in natural cashew butter, honey, and 2 Tablespoons fresh lime juice. Blend or pulse until combined and mixture forms a dough. If mixture is too dry, add an additional Tablespoon of fresh lime juice.
  3. Form dough into approximate 1 - inch balls.
  4. Store in an airtight container. For optimal freshness, store in the refrigerator.
