Last Saturday we picked up our last batch of fresh apples for the season. The Minnesota Landscape Arboretum is relatively close to where we live, and they have an Apple House that sells all kinds of varieties of apples in the fall.

Last weekend was the end of their selling season, and they had a sale on everything left. Of course, I stocked up! When I was picking out the apples, I couldn’t get the idea for an apple cider coffee cake out of my head.

So, as soon as I got home, I went to work!

The key to the coffee cake is good, tart apples and reduced apple cider. The first time I made this coffee cake I just added the apple cider in without reducing it.

The cake tasted great, but it didn’t have the strong apple cider flavor I was going for when I think of an apple cider cake.

So, the second time around I took 1 cup apple cider and spent 10 minutes reducing it to a half cup. Definitely worth the time!

The apple cider flavor is much stronger and exactly what I was thinking. So, please take the extra 10 minutes (or so) to reduce your apple cider. It’ll be worth your effort!

The rest of the cake takes no time at all. Just mix it together like a normal cake. And because all good coffee cakes contain a crumb or streusel layer, this one does, too!

The crumb layer is rich and buttery with a hint of cinnamon. A sweet glaze is drizzled over the top to finish it off.

Cut a big slice, grab a mug of hot cider, and spend a few minutes relaxing this weekend!

Apple Cider Coffee Cake

Prep Time: 15 minutes
Bake Time: 25 minutes
Total Time: 40 minutes

Ingredients

For the Cake

  • 1 C white whole wheat flour
  • 1/2 C all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 C butter, softened
  • 1/2 C sugar
  • 1/4 C brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 C apple cider
  • 1 C chopped tart apples

For the Topping

  • 1/2 C all-purpose flour
  • 1/2 C brown sugar
  • 1/4 C sugar
  • 1 tsp cinnamon
  • 5 tbsp butter

For the Glaze

  • 1/2 C confectioner's sugar
  • 1-2 tbsp apple cider, as needed

Instructions

  1. Preheat oven to 350. Spray a 9x9 inch baking dish with non-stick cooking spray.
  2. In a small saucepan, bring apple cider to a boil over medium-high heat. Reduce heat to medium and simmer until cider is reduced in half, about 10 minutes. Set aside to cool. (It works well to stick the saucepan on a trivet in the refrigerator while you work on the rest of the cake.)
  3. In a small bowl, whisk together flours, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice.
  4. In the bowl of a stand mixer, or with an electric mixer, cream together butter and sugars. Add in egg, vanilla extract, and apple cider until creamy. Add dry ingredients to wet ingredients and beat until combined. Stir in chopped apples.
  5. Prepare topping by stirring together flour, sugars, and cinnamon. Cut in butter until mixture resembles coarse crumbs.
  6. Spread batter into prepared baking dish. Sprinkle with crumb topping.
  7. Bake for 25-30 minutes or until toothpick inserted in the center comes out clean.
  8. Stir together confectioner's sugar and apple cider until smooth. Drizzle glaze over the top of cake. Serve.

Notes

If you want to skip the apple cider reduction time, just use 1/2 cup apple cider.
