It seems like the last couple of weeks leading up to the summer season have been kind of crazy around here. With the holiday, traveling, birthdays parties, sickness, and just life in general, it’s been a busy few weeks!

So, I’ve been taking every opportunity I can get to grab a few minutes of down time. And what makes the down time even better is having a couple of these cinnamon tea cookies to enjoy.

And don’t forget a cup of chai to go with them! I love enjoying a good cup of chai and so does my husband (still working on getting him to like coffee! 😉 ). It’s a great way to unwind after a busy day.

Unless, of course, you aren’t one for dunking things in your drinks then you won’t care about that aspect. But if you are, you’ll find that these cookies make great dunkers!

Cinnamon Tea Cookies Recipe from A Kitchen Addiction

Cinnamon Tea Cookies

Yield: approximately 30 cookies
Prep Time: 10 minutes
Bake Time: 12 minutes
Total Time: 22 minutes

Ingredients

  • 1 1/3 Cups flour
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 Cup sugar
  • 10 Tablespoons butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Sift together flour, cinnamon, salt, and baking soda in a small bowl. Set aside.
  3. In a large bowl, cream together sugar, butter, egg, and vanilla extract. Add dry ingredients to wet ingredients and stir until combined and dough forms.
  4. Make small balls (about 1 inch in diameter) with the dough. Place balls about 2 inches apart on a non-stick baking sheet or a sheet pan lined with parchment paper.
  5. Bake for 12-15 minutes, or until medium brown. Cool on a rack and store in an airtight container for up to 2 weeks.

I have not tried. However, I'm not sure the dough would be soft enough. You could use this classic spritz cookies recipe: https://www.a-kitchen-addiction.com/classic-spritz-cookies/ and just add some cinnamon to it. Hope that helps!
