Chocolate Peppermint Layered Fudge

I guess it is unofficial Peppermint Week here at A Kitchen Addiction! This is my third recipe with peppermint and my second recipe with peppermint and chocolate! I guess it only makes sense since chocolate and peppermint is the best holiday baking combination! :)

This is another easy fudge recipe that only takes a bit of time because you have to prepare the two separate layers. No candy thermometer needed though! If you are good at stirring with both hands, I suppose you could even make both layers at the same time. I always get distracted with something though, so I didn’t even try! The bottom layer is a rich, fudgy chocolate, while the top layer is a light, vanilla fudge with crushed peppermints. The combination is perfect for a highly addictive treat!

You can make this ahead of time, but if you are going to store it for any length of time, make sure to keep it cold. If it gets warm and then cold a couple of times, the peppermint starts to melt. (This comes from personal experience!) Have a great weekend!

Chocolate Peppermint Layered Fudge

Yield: at least 48 pieces

Ingredients

  • For the Chocolate Layer
  • 3/4 C butter
  • 1 1/2 C sugar
  • 1/3 C evaporated milk
  • 6 oz. semi-sweet chocolate
  • 1/2 (7 oz) jar marshmallow creme
  • 1/2 tsp vanilla extract
  • For the Vanilla Peppermint Layer
  • 1 1/4 C sugar
  • 1/3 C evaporated milk
  • 1/4 C butter
  • 1/2 (7 oz) jar marshmallow creme
  • 8 oz vanilla candy coating/almond bark, cut into pieces
  • 1/2 tsp vanilla extract
  • 1/2 C crushed peppermint candies

Directions

  1. Butter the bottom and sides of a 9×13 baking dish.
  2. To prepare the chocolate layer: In a large sauce pan, stir together sugar and evaporated milk. Add in the butter. Cook over medium heat until sugar dissolves. Stir occasionally to prevent scorching. Stirring constantly, bring mixture to a boil and allow to boil for 7 minutes. Remove from heat and stir in chocolate and marshmallow creme until melted and smooth. Stir in vanilla. Pour fudge into buttered pan. Smooth with a spatula to even the top. Allow to cool for 15 minutes.
  3. To prepare the vanilla peppermint layer: In a large saucepan, stir together sugar and evaporated milk. Add in butter. Cook over medium heat until sugar dissolves. Stir occasionally to prevent scorching. Stirring constantly, bring mixture to a boil and allow to boil for 7 minutes. Remove from heat and stir in candy coating and marshmallow creme until melted and smooth. Stir in vanilla. Pour vanilla fudge over the top of the chocolate fudge and smooth the top with a spatula. Sprinkle crushed peppermint candies over the top and gently press into the fudge.
  4. Cover fudge and place in the refrigerator to cool and set for at least one hour. Cut into pieces.

  3. Beautiful! I just finished frosting some brownies with a cream cheese frosting that I added red food coloring to as well as peppermint flavoring. Right before I serve them, I’ll add the crushed up candy cane. The candy cane tends to “weep” when I put it on too soon. So, yes, it is Peppermint Week!
