One Bowl Chocolate Chip Pumpkin Muffins

Ingredients
  • 1 1/2 C whole wheat or white whole wheat flour
  • 1/2 C quick oats
  • 1/2 C brown sugar
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 1 C pumpkin puree
  • 1/2 C honey
  • 1/2 C coconut oil, melted
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 C chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. Spray a muffin tin with non-stick cooking spray or line with cupcake liners.
  2. In a large bowl, whisk together flour, oats, brown sugar, cinnamon, baking soda, salt, nutmeg, and cloves.
  3. Add pumpkin puree, honey, coconut oil, eggs, and vanilla extract. Stir until just combined, making sure that the eggs are incorporated. Stir in chocolate chips.
  4. Scoop batter into prepared muffin tin, filling each cup about ⅔ full.
  5. Bake for 20-25 minutes or until toothpick inserted in the center of muffin comes out clean.
