Apple Cake with Maple Frosting
Serves: 9
For the Cake
  • ¼ C butter, softened
  • ⅓ C honey or sugar
  • 2 eggs
  • ½ C non-fat plain yogurt
  • ½ C unsweetened applesauce
  • 1 tsp vanilla extract.
  • 1 C whole wheat flour
  • ½ C white whole wheat flour or all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • 1 C finely chopped apples
For the Frosting
  • ½ C butter, softened
  • 2½ -3 C confectioner's sugar
  • 1 tsp vanilla extract
  • ½ tsp maple extract
  • 1 tbsp milk
  1. Preheat oven to 350. Lightly spray an 8x8 or 9x9 inch baking dish with non-stick cooking spray.
  2. In a stand mixer, or with an electric mixer, beat together butter and honey (or sugar) until creamy. Beat in eggs one at a time. Add in yogurt, applesauce, and vanilla extract and beat until thoroughly combined.
  3. In a separate bowl, whisk together flours, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt. Add dry ingredients to wet ingredients and beat until combined. Stir in apples.
  4. Pour batter into prepared baking dish.
  5. Bake for 20-30 minutes or until toothpick inserted in the center comes out clean. Remove to a wire rack to cool.
  6. While cake is cooling, prepare frosting. Beat together butter and 2½ cups confectioner's sugar. Add in extracts and milk. Beat until smooth. If more confectioner's sugar is needed, add 2 tablespoons at a time up to another ½ cup. Spread over cooled cake.
  7. Cut into pieces and serve.
