Loaded Peanut Butter Pretzel Oatmeal Cookies (100% Whole Wheat)

  • 1½ C quick oats
  • 1½ C whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ C butter, softened
  • ½ C no-stir natural peanut butter
  • ½ C honey
  • ⅓ C brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ C peanut butter chips
  • ½ C white chocolate chips
  • ½ C crushed pretzels
  • ¼ C mini chocolate chips
  1. Preheat oven to 350. Line a baking sheet with parchment paper or a baking mat.
  2. In a small bowl, whisk together oats, flour, baking soda, and salt. Set aside.
  3. In the bowl of a stand mixer (or with hand mixer), cream together butter, peanut butter, honey, brown sugar, eggs, and vanilla extract.
  4. Add dry ingredients to wet ingredients and mix until just combined. Stir in peanut butter chips, white chocolate chips, crushed pretzels, and mini chocolate chips.
  5. Drop dough by heaping tablespoonful onto prepared baking sheet.
  6. Bake for 8-10 minutes or until edges just start to turn light golden brown.
  7. Remove from oven to a wire rack to cool for 3 minutes before removing from baking sheet to cool completely.
