Almond Joy Brownies
Serves: 12
For the Brownies
  • ½ C all-purpose flour
  • ½ C unsweetened baking cocoa
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ½ C sugar
  • ⅓ C brown sugar
  • ¼ C butter, melted and cooled
  • ¼ C plain yogurt
  • 2 tbsp non-fat milk
  • 2 eggs
  • 1 tsp vanilla extract
For the Filling
  • 2 C sweetened shredded coconut
  • ⅔ C fat-free sweetened condensed milk
  • ½ C coarsely chopped almonds
  1. Preheat oven to 350. Spray a 9x9 or 8x8 inch baking dish with non-stick cooking spray.
  2. In a small bowl, whisk together flour, baking cocoa, salt, and baking soda.
  3. In a large bowl, stir together sugars, melted butter, yogurt, and milk. Add in eggs and vanilla extract and beat until well-combined. Add dry ingredients to wet ingredients and beat until just combined.
  4. Spread half of brownie batter into the bottom of prepared baking dish.
  5. Combine all ingredients for the filling until well-mixed. Drop by spoonfuls over the top of the brownie batter and gently spread with a spatula. Spread remaining brownie batter over the top.
  6. Bake for 25-35 minutes or until set and toothpick insert into the middle comes out mostly clean.
  7. Allow to cool for 30 minutes before transferring to the refrigerator and allowing the brownies to cool another 30 minutes. Cut into bars.
  8. Store leftovers in the refrigerator.
