Spiced Apple Pie French Toast Bake

Ingredients
For the French Toast
  • 12 C cubed day old french bread
  • 10 eggs
  • ½ C maple syrup
  • 1½ C milk of your choice
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon
  • 1½ tsp nutmeg
For the Apple Pie Filling
  • 5 C thinly sliced or chopped apples
  • ⅓ C sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ allspice
  • ⅛ tsp cardamom
For the Crumb Topping
  • ¼ C butter, softened
  • ¼ C brown sugar
  • ¼ C all-purpose flour
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • ⅛ tsp allspice
  • ⅛ tsp salt
For the Spiced Maple Syrup, optional
  • ½ C maple syrup
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp cloves
Instructions
  1. Preheat oven to 350. Spray a 9x13 inch baking dish with non-stick cooking spray.
  2. Add cubed bread to a large bowl. Set aside.
  3. In a separate large bowl, whisk together eggs, maple syrup, milk, vanilla extract, cinnamon, and nutmeg. Pour over cubed bread and stir to combine.
  4. Stir together apples, sugar, cinnamon, nutmeg, allspice, and cardamom.
  5. Pour ½ to ⅔ of bread mixture into the bottom of the prepared baking dish. Using a slotted spoon to scoop apples while straining the excess liquid, spoon apple pie mixture over the top.** Top with remaining bread mixture.
  6. In a small bowl, whisk together brown sugar, flour, cinnamon, nutmeg, allspice, and salt. Cut in butter until mixture resembles coarse crumbs. Sprinkle over the top.
  7. If baking the next day, cover and store in refrigerator until ready to bake. If baking immediately, bake for 55-65 minutes or until topping browns and center is puffed. (Center will deflate as it cools.) Allow to cool for 10 minutes before cutting into pieces and serving.
  8. While french toast is baking, combine maple syrup, cinnamon, nutmeg, and cloves in a small saucepan and bring to a boil over medium heat. Remove from heat and set aside until ready to use.
  9. Store leftovers in the refrigerator.
Notes
**You can just spoon the apple mixture over the french toast without straining the excess liquid, but the french toast take will take a few minutes longer to bake and will be on the wetter side.
