Loaded Peanut Butter Monster Cookie Brownies

Ingredients
For the Brownie Layer
  • ½ C butter
  • ¼ C unsweetened baking cocoa
  • ⅓ C melted coconut oil
  • 1 C water
  • 2 C granulated sugar
  • 2 large eggs
  • ¼ C milk of your choice
  • ½ tsp vanilla extract
  • 1 C SunRidge Farms Organic Fine Ground Whole Wheat Flour
  • 1 C SunRidge Farms Organic Unbleached White Flour
  • 1 tsp baking soda
  • ½ tsp salt.
  • ¼ C SunRidge Farms Organic Dark Chocolate Chips
  • ¼ C SunRidge Farms Organic Raw Pecans, chopped
For the Cookie Layer
  • 6 tbsp no-stir natural creamy peanut butter
  • 2 tbsp butter, softened
  • ¼ C brown sugar
  • 2 tbsp sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 6 tbsp SunRidge Farms Organic Fine Ground Whole Wheat Flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¼ C quick oats
  • ½ C SunRidge Farms Organic Mini Milk Chocolate Peanut Butter Cups
  • ¼ C SunRidge Farms Fair Trade Certified Milk Chocolate Rainbow Drops
  • ¼ C SunRidge Farms Organic Dark Chocolate Chips
For the Peanut Butter Frosting
  • ½ C no-stir natural creamy peanut butter
  • ½ C butter, room temperature
  • 2 C confectioner's sugar
  • 2-3 tbsp half & half or milk
  • 1 tsp vanilla extract
  • additional candy for topping
Instructions
  1. Preheat oven to 350. Spray a 9x13 inch baking dish with non-stick cooking spray. Sprinkle with unsweetened baking cocoa.
  2. In a medium saucepan, stir together butter, baking cocoa, coconut oil, and water over medium heat. Bring to a boil, stirring constantly to prevent scorching. Remove from heat. Set aside to cool.
  3. In a large bowl, whisk together sugar, eggs, milk, and vanilla extract. Slowly whisk in the cooled melted butter mixture.
  4. In a medium bowl, whisk together flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir to combine. Stir in dark chocolate chips and chopped pecans.
  5. Pour batter into prepared baking dish.
  6. Beat together peanut butter and butter until smooth. Add in sugars, egg, and vanilla extract. Beat until creamy. Stir in flour, baking soda, and salt until well-combined. Stir in oats until combined. Stir in peanut butter mini cups, chocolate rainbow drops, and dark chocolate chips.
  7. Drop cookie dough by spoonfuls over the top of brownie batter.
  8. Bake for 30-35 minutes or until toothpick inserted in the center comes out mostly clean. A few crumbs means the brownies will be nice and fudgy.
  9. Remove brownies to a wire rack to cool.
  10. While brownies are cooling, beat together peanut butter and butter until creamy. Beat in confectioner's sugar, half & half, and vanilla extract. Add additional half & half as needed until desired consistency is reached. Spread frosting over cooled brownies. Top with additional candy. Cut into pieces and serve.
