Maple Glazed Apple Peanut Butter Bars
Serves: 16
For the Bars
  • 2 C white whole wheat flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ⅛ tsp cardamom
  • ½ C butter, softened
  • ¾ C brown sugar
  • ½ C sugar
  • 2 eggs
  • 2 tsp maple extract
  • ½ C no-stir creamy peanut butter
  • 1½ C shredded apple
For the Glaze
  • ½ C confectioner's sugar
  • 1 - 1½ tbsp milk
  • 1 tsp maple extract
  1. Preheat oven to 350. Spray a 9x9 or 9x13 inch baking dish with non-stick cooking spray. (The bars pictured were made in a 9x9 inch dish.)
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom. Set aside.
  3. In the bowl of a stand mixer, or with an electric mixer, beat together butter, brown sugar, and sugar until creamy. Beat in eggs and maple extract. Beat in peanut butter until combined.
  4. Add dry ingredients to wet ingredients and stir until combined. Stir in shredded apple.
  5. Spread batter in prepared baking dish.
  6. Bake for 20-25 minutes for a 9x13 inch baking dish and 25-30 minutes for a 9x9 inch baking dish, or until a toothpick inserted in the center comes out mostly clean. For more cake-like bars, bake until toothpick inserted in the center comes out completely clean.
  7. Remove to a wire rack to cool.
  8. Stir together all ingredients for the glaze until smooth. Drizzle over cooled bars. Allow glaze to harden and serve. Or, cut into bars. Drizzle glaze over bars. Allow glaze to harden and serve.
