Honey Apple Upside Down Cake
Serves: 8
For the Apple Layer
  • 1 tbsp butter, melted
  • 1 small apple, thinly sliced
  • 3 tbsp Tate+Lyle Honey Granules
For the Cake
  • 1½ C white whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp cloves
  • ½ C Tate+Lyle Honey Granules
  • ⅔ C plain yogurt
  • 6 tbsp milk
  • 3 tbsp olive oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 C finely chopped apples
  1. Preheat oven to 350. Line a 9 inch cake pan with parchment paper. Brush paper with melted butter. Arrange sliced apples over the top until bottom of pan is completely covered. Sprinkle with honey granules.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, cloves, and honey granules.
  3. In a small bowl, whisk together yogurt, milk, olive oil, eggs, and vanilla extract. Add wet ingredients to dry ingredients and stir until just combined. Stir in chopped apples.
  4. Carefully spread batter over the layer of apples.
  5. Bake for 30 minutes or until toothpick inserted in center comes out clean.
  6. Remove to a wire rack to cool completely before inverting out onto a plate.
