Fudgy Flourless Brownies
Serves: 25
For the Brownies
  • ½ C butter
  • 1⅓ C dark or semi-sweet chocolate, chopped
  • ¼ C unsweetened baking cocoa
  • ½ C sugar
  • 3 eggs, room temperature
  • 1 tsp vanilla extract
  • ¼ tsp salt
For the Ganache
  • 1 C chopped dark chocolate or semi-sweet chocolate
  • ⅓ C half & half or heavy whipping cream
  • coarse sea salt
  1. Preheat oven to 325. Line a 9x9 inch baking dish with aluminum foil and lightly spray with non-stick cooking spray.
  2. In a medium saucepan, melt butter and chocolate together over medium-low heat. Stir constantly to prevent scorching. Stir in baking cocoa until smooth. Remove from heat.
  3. In a small bowl, whisk together sugar and eggs for a minute. Stir egg mixture into chocolate mixture. Stir in vanilla extract and salt.
  4. Pour into prepared baking dish. Bake for 18-22 minutes or until toothpick inserted in the center comes out mostly clean.
  5. Remove to a wire rack to cool completely.
  6. While brownies are cooling, melt together chopped chocolate and half & half over low heat until smooth.
  7. Spread ganache over the top of cooled brownies. Sprinkle with sea salt. Refrigerate until ganache is set about 30-40 minutes.
